Position Information: UC Riverside's Dining Services is recruiting for a new Research, Development, and Training Chef. The full salary range for the Research, Development, and Training Chef is $66,500 - $118,300 annually. However, the expected pay scale for this position is up to $92,400 annually. We base salary offers on a variety of considerations, such as education, licensure and certifications, experience, and other business and organizational needs.
Please note that a cooking assessment will be required as part of the selection process.
Reporting to the Director of Culinary Operations, Dining and Hospitality Services, the Research, Development and Training Chef is responsible for new concept and recipe development that will fit into the university dining operational model. With knowledge of culinary trends, a proficiency in culinary techniques and world cuisines, the R&D Training Chef will bring expertise in flavor development and culinary execution. This position is highly collaborative and must have the ability to work well within a cross-functional team, including aligning to core values within a mission driven department culture. Ability to analyze existing operations and present on trend menus that meet current sustainability requirements with equipment recommendations to leadership teams for new concept or the redevelopment of an existing concept. This position will also create training programs for professional staff and student employees, that will support and enhance culinary, safety, and sanitation skills needed to work in a wide-range of dining operations. In conjunction with the senior leadership team this position will assess and determine training needs at all levels. This will require developing job aides, preparing educational materials and creating multiple training schedules that are inclusive of the unit operations. Will assist the Director of Culinary Operations with vendor sourcing, procurement product cuttings for all dining food service operations. As well as contribute and support the department with ongoing development of our robust student employee culinary program. Will maintain partnerships with local culinary training programs to provide continuing educational opportunities and as an employment resource. Serves as a member of the Dining Services Senior Leadership Team.

Requirements: Educational Requirements
Bachelor's degree in related area and/or equivalent experience/training. Required
Conditions
Must complete and attain Certified AllerTrain Trainer Course within the first year of employment. Required
Must complete Serve Safe Manager course within the first year of employment or have valid Serve SafeCertification. Required
Must successfully complete online courses, written test and practical exam for ACF CEC Certification within 3 years of employment. Required
Experience Requirements
6 - 10 years of related experience. Required
Experience with creating training programs that support food service operations (e.g. culinary, safety and, sanitation). Required
Experience with culinary research and development of diverse menus for varied restaurants. Required
Prior experience in culinary food service operations. Required
Experience with leading a large diverse team. Preferred
Experience with menu management systems (e.g. FoodPro, ChefTec, JAMIX). Preferred
License Requirements
Valid driver's license and clean driving record. Required
CCC certification with the American Culinary Federation or equivalent. Preferred

Minimum Requirements
Advanced knowledge in food preparation, nutrition, special needs and sanitation regulations.
Advanced verbal and written communication in the English language, and active listening, dynamic flexibility, critical thinking, and ability to multi-task and ensure effective time management.
Advanced decision making and reasoning skills, and ability to develop original ideas to solve problems, and perform operations analysis and quality control analysis.
Advanced skill in effective interpersonal and work leadership skills to provide guidance to all levels of personnel.
Intermediate computer applications skills.
Knowledge of online purchasing systems, timekeeping systems, and menu management systems.
Project management skills and be able to lead diverse teams through various types of projects. Knowledge of managing individual project timelines and deliverables, and support wider project direction and deadlines.
Preferred Qualifications
Ability to work independently and make decisions regarding menu and special event planning, initiation of new programs, customer service strategies, staffing levels, and financial projections.
Knowledge of sourcing and specifying food, equipment and supplies, and in the administration of food and beverage contracts.
Knowledgeable of current UCOP sustainable food requirements and criteria.
