The Registered Dietician, Campus Dining is a key member of the Campus Dining Team within the Division of Administration at Vanderbilt University. The Registered Dietitian of Campus Dining is responsible for combining expertise in food, nutrition, and the culinary arts to plan and implement nutritional programs and support the overall dining program. The Registered Dietitian assists in the promotion of health and wellness within the campus community, including; providing nutrition information for on-campus dining locations, 1-on-1 counseling with students, providing nutrition-related services to individuals and groups, and developing and leading allergen food handling program and training sessions for Dining Services team members. Reporting directly to the Executive Director, this position is responsible for managing student interns.

We have main dining centers, restaurants and cafes, convenience stores, and we employ over 300 employees.
Duties and responsibilities
Provides individual support to students and parents as needed to familiarize them with dining locations and to identify options related to their specific condition.
Conducts one-on-one nutrition counseling and consultations for students with special dietary needs. The purpose of consultation is to enable the student to assume more personal responsibility for their health and to champion person decision making in dining halls and across campus.
Works with student accessibility/disability services and other campus partners for proper student registration and medical documentation as it pertains to meal plan exemptions and accommodations.
Serves as liaison between students and culinary teams to ensure students' dietary needs are being accommodated.
Follows HIPAA and FERPA guidelines throughout the entire nutrition counseling process.
Allergy and Special Diet Programs
Works with Executive Chef and culinary teams to ensure that operations are in compliance to be certified by Kitchens with Confidence as well as keeping up certification through monthly swab testing and audits.
Coordinates and manages Nima sensor program to include relationship with company and ensuring that operations have necessary supplies to successfully test food for students on allergy ordering program.
Leads training classes of Allertrain Lite, Allertrain U, Nima sensor training, and any other classes that support the allergy program of Dining Services.
Manages online ordering program for students with special dietary needs that can't be accommodated through normal operations.Work with Executive Chef to design menus for online ordering system and coordinate with qualified students.
Also supports in management of Kosher Food Program and other religious dietary solutions.
Offers nutrition-based information with a health focus to staff and students.
Spread nutrition education and awareness through educational tabling events, cooking demos, lecture presentations, health fairs, and other on-campus programming in collaboration with the Marketing Manager.
Develops story ideas and content for nutrition-based, or food allergy, articles for various publications and in collaboration with Vanderbilt University's Department of Communications.
Recipe and nutritional support
Works with Executive Chef to develop recipes based on specific nutrition guidelines and/or ingredients.
Reviews and audits menus and recipes in Fusion to ensure accuracy of nutritional information, and other specified criteria, in Net Nutrition.
Reviews and provides feedback to culinary teams regarding recipes and menus meeting specified nutrition guidelines.
Maintains dietetic registration and continuing education requirements.
Develops and implements an individualized portfolio plan for professional growth and development including participation in professional organizations and activities, workshops, and seminars.
Profile of an Ideal Candidate
Bachelor's degree in food science, culinary arts, clinical nutrition, food and nutrition, or related area, granted from a U.S. regionally accredited college or university is necessary.
Registered Dietitian with active registration by the Commission on Dietetic Registration of the American Dietetic Association is necessary.
Minimum of 2 years' experience in nutritional counseling is preferred.
Strong communication (verbal, written, interpersonal) skills and an ability to communicate effectively with a diverse population is necessary.
Strong time management, organizational and multi-tasking skills and an eye for detail is necessary.
Demonstrated ability to deliver exceptional customer service is necessary.
Manage people, maintain confidentiality and be accountable for Vanderbilt assets is necessary.
